C is for Cookie

I know, I know
January isn't about cookies
it's about resolutions
and fasting on Monday
and healthy eating the rest of the week
blah, blah, blah
but food is my business
and despite all the warnings
cookies are still food
here's a little recipe
that i hope you try
because it is simple
and cute
and delicious
oh happy day cookies

(the original recipe has been passed down through my family, but came-i think-from Paula Peck)
1 cup butter-room temperature
3/4 cup sifted powdered sugar
1 tsp vanilla extract
1/2 tsp salt
2 cups flour
Beat sugar and butter until completely mixed together, but not light and fluffy.  Add vanilla and salt and mix until just incorporated. Slowly stir in flour and only mix until just incorporated.  Divide dough in 2 portions and roll in a cylinder.  Wrap in plastic wrap or parchment paper and place in refrigerator for a couple of hours. (you can chill for up to 3 days or freeze at this point).
When ready to bake, remove from refrigerator and preheat the oven to 325.  Let dough sit for a bit, until it begins to soften on the outer layer only.  Fill a shallow pan or dish with colorful sprinkles and gently roll the dough cylinder to coat.  Be gentle, but be thorough.
Slice the dough into 1/4" slices and place on a parchment lined cookie sheet.  Bake until beginning to brown.
Let cool and enjoy!
These make really great bookends to a small scoop of ice cream
